Fried Potato Delight

Ingredients

  • 4 potatoes
  • 2 tbsp “Potato Delight” seasoning for fried potatoes (Herbaria)
  • 3 tbsp olive oil
  • 1 tbsp flat leaf parsley or chives, finely chopped

Pre-heat oven to 180°C / 350°F. Wash potatoes and prick with a fork. Place in ovenproof dish, drizzle with olive oil, coating them well. Cover tightly with aluminium foil and bake for about one hour. Allow cooling off slightly, then cut potatoes into slices. Heat olive oil, add potato slices, and fry until crisp and golden brown. Sprinkle “Potato Delight” over potatoes right before they are done, continue frying just a little longer. Serve with fresh herbs.
